Polyphenols are biologically active compounds with antioxidant properties present in foods such as black tea, coffee, red wine and cocoa; its content depends on atmospheric conditions, cultivation, processing and storage. The objective of this work was to determine the content of polyphenols in foods and beverages by two colorimetric methods and to establish a correlation with the antioxidant capacity. The content of polyphenols was determined by the Folin-Ciocalteu and ISO 9648 1988 methods in foods and beverages and with this, their consumption in the diet could be estimated. The linear correlation between antioxidant capacity and polyphenols (Folin-Ciocalteu method) is from very strong to strong, while with the ISO 9648-1988 method it is from strong to moderate. The foregoing would indicate that by ingesting foods and beverages that have a higher content of polyphenols, they will present a greater antioxidant capacity, favoring the body’s antioxidant defense.
